6 Week Online Course Outline
Course dates: Feb 6th – Mar 17th
Each week you will have access to join a 2-hour virtual live cooking session where you will learn a cooking technique perfect dinner.
(These will take place on Thursdays, 6;30 pm, GMT)
(Sessions are recorded, so if you’re unable to join the lives, you can watch back and cook at your pleasure.)
Session 1
Lets stew
Italian fish potato stew with homemade garlic bread
In our first session, I will share with you my easy techniques on how to layer different flavours in a guaranteed crowd-pleasing stew. It’ll be made with fresh, simple ingredients to create an easy, sexy, healthy and comforting dish that can be adapted in any number of ways
Session 2
How to pimp up your basics
The best Italian basil pesto pasta dish, plus a classy fruit tart
In this class, you’ll learn how to take the most basic of ingredients, and transform them without breaking a sweat. You’ll learn the best way to match a pasta sauce to shape, and how to make the most of ready-made pastry. No one will know the difference.
Session 3
How to perfect pan frying (meat, fish and veg)
The perfect steak, the perfect pan-fried fish and pan-fried potatoes, plus sauces
Pan frying is one of the quickest ways to cook food. But did you know there are different techniques required to cook different ingredients to meet their very best potential? I will share you my top tips, from when to season to how to judge temperature, and avoid over-cooking.
Session 4
Master how to cook a creamy risotto
Sausage red wine risotto and broccoli breadcrumb salad
Have you shied away from making a risotto before, as you’ve heard it’s too difficult? Or have you had a bad risotto experience, that’s put you recreating it at home? In this live session, I share with you my top tips on how create the perfect al dente creamy risotto- No salty rice puddings here.
It’s guaranteed to become a regular rotation in your weeknight repertoire.
Session 5
Roasting/oven baking
A choice of roasted meat or fish served on a bed of Italian vegetables, a parsley anchovy relish, roasted lemon potatoes. Plus a sexy baked fruit pudding
Sticking everything in an oven after a long day at work is what some of us need – and done right, it can be a low-effort way to create some properly spectacular food. In this live session, I will be sharing with you how to create different roasting dishes from savoury to sweet, and my tips on how to get it right.
Session 6
How to create the ultimate lasagna
Porcini mushroom and sausage lasagna with seasonal vegetables.
My lasagna never misses: it’s a guaranteed winner. In our final session, you’ll learn the tricks to making one of the most popular crowd pleasing Italian dishes on the planet. I will share my tips on layering, flavour combinations, and how to perfect your sauces. You’ll never look back.

Cooking doesn’t come easy to everyone. A hectic busy life may mean that cooking dinner is the last thing you want to do. Some of you may even think that you can’t cook the dinners you really crave and don’t see the point, when ordering a takeaway is the easier option. But there is something so empowering in creating food that you love to eat.
What we choose to eat is the most important decision we make everyday. It provides us with the energy to deal with everyday life, and has a massive impact on how our body, mind and soul function. But for some of us, it’s too easy to search other alternatives to feed ourselves, which in the long run can have a negative impact on how we feel.
The Confidencee Cooking course is created for those who want to have a different attitude when it comes to cooking dinner and want to learn techniques that will help build your cooking confidence.
Rather than feel overwhelmed by the thought of cooking dinner, you’ll learn to love to cook and in the process eat better and feel happier for it.

Cooking Confidence Course FAQ'S
There are two payment options. You can pay for the course all at once. Or pay across 3 monthly instalments. * Please note any discount codes can’t be applied to payment plans.
Refunds can be offered if you change your mind before the course starts. But becomes non-refundable from the first day the course begins.
All live cook-a-longs are hosted virtually on Zoom.
All live cook along sessions are recorded and is sent out the day after along with the step-by-step recipe cards. It is also uploaded into the Facebook group to refer back to whenever you wish. So if you struggle to make the live sessions you can watch back when you have time. Plus, you can ask me questions within the Facebook group.
If you have time to join the live cooking session on Thursday, at 6:30 pm you will need two hours set aside.
Apart from that, you can cook the other recipes at your leisure. You will be sent recipes and tips to try each week but you can fit those in based on your own availability. You won’t be tested at any point so you can even catch up after the course has ended.
The Cooking Confidence Course shares tips and recipes on how to cook fish and meat as well a vegetables.
It can always feel a little daunting to meet a new group of people. However, it’s very important to me that everyone feels comfortable and feel part of the community. If you don’t want to actively interact, you’re more than welcome to turn off your video during any live sessions. But I encourage you to join when you’re ready as you will get the most out of the course that way.
The Confidence Cooking Course is open to all levels of cooking and is all about helping you find your inner love for cooking. You don’t need any basic cooking skills to join. Through out the course, I will help build your confidence by teaching you the essential skills to help you become more creative in the kitchen.
The private Facebook is where all the other bonuses including the recipe ideas, foodie recommendations, etc will be exclusively shared. Plus it’s a great place for you to interact and engage with the other members in between the live sessions.
However, most of the content will be shared in the email roundup sent each month.
T&Cs
Price is per person, and not household. If two people from one household would like to cook together, they should book 2 different spots.
Please do not share digital recipe cards or live cooking sessions with anyone who isn’t part of the sauce club.
If you choose the 3 monthly payment plan, you have a legal responsibility to pay the final payment even when the 6 weeks course has ended. The Sauce club is non-refundable as soon as the new course starts on 6th February.

I’m a professional qualified cook. Plus I have travelled all over Italy learning from the best home cooks. All the tips and cooking secrets that I have learnt over the years I’m now sharing with you to help you get motivated and build your kitchen confidence rather than have it feel like a chore.
I’ve taught hundreds of people in fun stress-free cook alongs’ and have regularly helped others fall in love and create a positive mindset toward cooking.
I have my own personal story where cooking helped me find my own confidence, not only in the kitchen but in my own self. Eating better food gave me the energy and focus I needed to deal with everyday life and I have never looked back. All it took was to change my mindset. Rather than look at it as a chore I realised that it was a way to better myself.
You may have never considered yourself a ‘foodie’. You may have never felt you belonged in the food world which meant you never thought you could cook EASY, SEXY, HEALTHY delicious food. But I believe that eating well is not a luxury. It’s something we all have the right to do and learning how to cook with confidence and create delicious dishes with a handful of ingredients is a great place to start.
