Italian Sausage Ragu

We’re in the second week of a serious lockdown during this pandemic and while I’m self-isolating on my own, I’ve bee re-creating some classic Tiny Italian recipes that I hadn’t cooked for a long time. I had forgotten how good some of those dishes were and were the catalyst to my love affair with Italian food. That includes this sexy Italian sausage ragu.

I remember the first time I cooked this dish. I had bought myself The River Cafe – Book one, the one with the shiny blue front cover. At the time, I was in my early twenties, living in Brighton, where I lived in a house with 3 guys. Their diet was awful and I found myself falling into bad habits. However, on occasion, I would offer to cook and this dish would go down a right treat. They would be practically licking their bowls, looking up at me, wanting more.

Since then, I knew this sausage ragu would be my secret weapon when dating and it never failed me. If I liked someone enough, I would cook them this dish and it would always go down a storm.

What I love about this dish is gives you the same comfort as a good bolognese but it doesn’t take as long to slow cook. A good bolognese may take at least a few hours to maximise its flavour. However, this sausage ragu only takes about 45 mins. Italian sausages are already packed with salty flavour and combined with sweet juicy tomatoes it’s a marriage made in heaven. The addition of cream and parmesan directly into the sauce, adds a level of decadence that when you have your first mouthful, I can guarantee that your eyes will be rolling into the back of your head in ecstasy.

I’ve already had some lovely feedback from people who have cooked it since watching my cookalong last weekend. Give yourself a treat, cook and enjoy this sexy sausage ragu.

Italian Sausage Ragu

  • 1 onion, finely chopped

  • 1 garlic clove, finely chopped

  • Extra virgin olive oil

  • Chilli flakes

  • Italian dry herbs

  • 2 Italian sausages or high quality pork sausages, removed from skins and roughly chopped.

  • 150g pancetta or streaky bacon

  • 50ml red wine

  • 500ml tomato passata or tinned tomatoes

  • 20ml double cream

  • 20g parmesan, grated

  • Sea salt

  • Black pepper

  • 250g tagliatelle, mafalde or rigatoni pasta

ITALIAN SAUSAGE RAGU

  • Drizzle olive oil into a saucepan. When it has heated, add the chopped onion and garlic. Make sure it’s well coated in the olive oil and cook on a low heat until the veg has softened. It will take about 5 minutes
  • Next, add the chilli flakes and the dry herbs, a good pinch of each, and stir well into the veg and cook for another a few minutes.
  • Add in the sausage meat and pancetta. Cook until it has cooked through and browned.
  • Pour in red wine, turn up the heat slightly and cook until it has evaporated.
  • Pour in the passata, bring to the boil and then simmer for at least 30 minutes. Add a little water if it’s starting to look dry.
  • In the meantime, cook the pasta in salted boiling water as instructed on the packet. Time it with the finished cooking time of the ragu.
  • When the tomato sausage ragu has finished slow cooking. Taste and season with salt and pepper. Then, add the cream and parmesan. Give it a good stir and cook for a few more minutes.
  • Add the cooked pasta to the ragu and give it a good stir ensuring that the pasta is well coated. Serve immediately with extra parmesan.

I’m 46 today ❤️
And I think more than anything, I feel grateful.
The road to 46 definitely hasn’t been a straight one. There have been some brilliant chapters and some bloody difficult ones, a few unexpected plot twists 😂 and plenty of times I’ve had to change direction and start again. But all of it has brought me here.
But sitting here at 46, I don’t want to give those difficult years all the attention.
Because look at what I’ve managed to give myself despite them.
A life between London and Lecce. A home I love. Work that that provides me so much freedom. Adventures. Food. Music. Dancing. Ridiculous amounts of laughter. And the freedom to keep being curious about what comes next.
Most importantly, I have the most incredible people around me. People who love me, show up for me, make me laugh until I cry and remind me how bloody lucky I am.
I’m also really proud of the relationship I’ve built with myself.
I think younger me spent a lot of time believing happiness would arrive when everything finally fell into place.
At 46, I know better.
Life can be messy and uncertain and occasionally throw an absolute shitshow your way 😂 and still be really, really good.
This past year especially, I’ve felt myself coming back to life. Not becoming someone new, actually. Becoming more myself.
So today I’m grateful for everything I have, incredibly proud of everything I’ve created for myself, and very excited about the woman I’m still becoming.
46. And there is still so much I want to see, eat, dance to, discover, love and experience. ❤️

This is NOT the Italian breakfast you’re expecting… 🇮🇹
Because when you think of breakfast in Italy, you probably think coffee, cornetto, quick, sweet and simple.
Breakfast @lilithristorante in Salento was something completely different.
Paul @the_only_giglio and I sat down and the dishes just kept coming. Frittata, a gazpacho made with local yellow tomatoes, ham and cheese focaccia, fruit, quince jam, a peach rice pudding, chocolate torte, maritozzo… and even a little fruit.
Basically, not quite the coffee-and-cornetto situation you would be expecting 😂
And I LOVED it.
It was generous, surprising and gave me a completely different take on what breakfast in Italy can look like.
And this is one of the things I love most about exploring food in Italy; just when you think you know it, somewhere comes along and shows you something completely different.
So… are you sticking with your coffee and cornetto, or are you joining me at this table? 😂

I haven’t cooked myself pasta in ages… and this 15-minute salmon, courgette & tomato pasta is what finally broke the drought 😂🍝
A super easy pasta recipe with a handful of ingredients, very little effort and one little ingredient that makes ALL the difference, lemon zest 🍋
Sometimes you forget that cooking yourself something bloody delicious doesn’t need loads of time or ingredients. A little love goes a long way.
Salmon, courgette & tomato pasta
Fry garlic in olive oil, then add thinly sliced courgette and cook until softened.
Add a tin of tomatoes, @muttipomodorouk polpa is my favourite, season and leave the sauce to cook down while you boil your pasta water.
Cook your pasta (I love linguine or spaghetti for this because the tomato sauce clings to it beautifully).
For the last 4 minutes, add your chopped salmon and lemon zest to the sauce. That little bit of zest completely lifts the whole dish.
Drain the pasta and toss it straight into the sauce with a splash of pasta water until everything becomes lovely, creamy and glossy.
Finish with plenty of black pepper and fresh basil if you have some.
15 minutes. A handful of ingredients. A proper bowl of pasta.
Sometimes that’s all you need ❤️

When did food shopping become so antisocial? 😅
More and more in the UK, I walk into a supermarket and there are barely any tills with an actual person behind them.
Scan your own shopping. Pay. Leave.
Efficient? Absolutely.
But after spending so much time in Italy, I’ve realised how much I value those tiny everyday interactions; saying buongiorno, having a little chat, recognising the person behind the counter. Nothing profound. Just… human connection.
And I do wonder if, in our obsession with making everything quicker and more convenient, we’re slowly removing those little moments from everyday life.
Technology can make our lives easier, help us work smarter and give us more time.
But surely the point should be to give us more time to be human, not replace the human bit altogether.
Maybe I’m old fashioned, but I don’t want a completely frictionless life if it means never having to speak to another person.
Am I alone on this one? 👀
