Pan-fried Sea bass w/cannellini beans & salsa verde
This dish is one of those dishes that may sound a little fancy but takes no time at all. If you want to impress someone without slaving all day in the kitchen (maybe in the love capacity), this is the dish for you. I call it THE LOVE DISH!
Ingredients (serves 3-4)
For the fish
4 fillets of Sea Bass
Plain Flour
Salt & Pepper
For the cannellini bean mash
2 x 400g tins of Cannellini beans, drained
1 garlic clove
Rosemary
Olive oil
For the Salsa Verde
30g Parsley
1 tbsp Capers
40g gherkins
1 Garlic clove, chopped
1 lemon, juice
150ml Olive Oil
Salt & Pepper
- Start by making the salsa verde; blitz all the ingredients in a food processor. Done.
- For the cannellini bean mash, drizzle olive oil to a pan & add the garlic & rosemary. Fry on a low heat for 2-3 minutes.
- Add the beans to the pan and heat through for 10 mins.
- Roughly mash the beans with the back of a fork.
- Season the sea bass & lightly dust with flour
- In a frying pan, drizzle a little olive oil; on a medium heat add the sea bass skin face down. Cook for 3 minutes, then turn over carefully and cook for a further 2 minutes.
- Serve the fish on a bed of cannellini mash & drizzle salsa verde on top of the fish.
