Nonna’s Summer Potato Salad

Nonna’s Summer Potato salad is one of those dishes that I remember my Nonna throwing together during the summer in Italy and I loved it. Apparently I used to thrown these unnecessary tantrums if pasta was not cooked everyday on my summer holidays, however this salad changed all that. This dish is great just on its own, or served up at a barbecue

Nonna's Summer Potato SaladIngredients (serve 3-4) 

300g Salad Potatoes

200g Tomatoes, sliced

2 Red Peppers

1 red onion, finely sliced

Fresh Basil, chopped

150g Green Olives

Olive Oil

Salt & Pepper

  • Pre-heat the oven 220c.
  • Place the peppers on a baking tray & roast for 15-20 minutes until the skin starts to blacken.
  • Cook the potatoes in salted boiling water for 20 minutes. Drain. Let them cool down & peel off the skin. Cut into thick slices.
  • Slice the peppers.
  • Add all the ingredients into a large bowl & mix together with the olive oil, salt & pepper
  • Its that easy!
