Nonna Gina’s Italian chicken and potato bake

‘Diano’ – which literally means baking dish in my family’s town dialect, is how my Nonna Gina used to call this dish. It’s one of those humble, soul comforting dishes that I has forever been a part of my life. This Italian chicken and potato bake has massive importance within my family. Even though my Nonna passed away over 15 years ago, it’s still being cooked regularly by many family members including by my mother who was her daughter-in-law. More times than not, when my mum asks me what I would like for Sunday lunch, my first option is this beauty.

As with many Italian dishes, there is never only one method to cook a meal. Every region, town and family member has their own version with a tweak here, a tweak there. So, if you were to google Italian chicken and potato bake, you will be presented with many different recipes across many pages. However, this version is very dear to me as it’s my Nonna’s recipe. I never thought I would share it via the Tiny Italian as I didn’t believe anyone would be interested in such a humble and simple dish. I used to think, that maybe my readers wouldn’t find it exciting enough. How wrong was I? VERY.

During COVID-19 lockdown living, I decided to film a recipe video sharing the simplicity of its preparation and the response was so overwhelming. I never thought this nostalgic dish would be so popular amongst so many of you.

There are only a handful of steps to prepare and cook this recipe, making it incredibly simple for anyone to recreate it. A key tip is to ensure you use a baking dish that ensures all the ingredients are perfectly snug within and not too large. Secondly, it’s essential that the chicken is marinated and seasoned for at least 15 minutes (with the onion, garlic, pepper and thyme) before it’s placed in the baking dish with the other ingredients, to maximise flavour. Thirdly, the potatoes must be sliced as thin as possible to ensure that they cook through alongside the chicken, otherwise, you may find yourself with raw potato which won’t be pleasant to eat. When it comes to the stock, it needs to be poured around the edges of the baking dish, rather than on top. Otherwise, you will find that the parmesan crumb will be washed off the top of the potato slices. Finally, it’s important to brown those potatoes towards the end to get a lovely crunchy topping.

Italian chicken and potato bake

  • 6 chicken thighs

  • 1 red onion, finely diced

  • 1 garlic clove, finely chopped

  • 1 red pepper, finely sliced or 10 cherry tomatoes, halved

  • 1 tsp dry thyme

  • 4 medium white potatoes

  • 60g breadcrumbs

  • 60g grated parmesan

  • Fresh parsley, handful, finely chopped

  • 400ml vegetable stock

  • Extra virgin olive oil

  • Sea salt

  • Black pepper

ITALIAN CHICKEN AND POTATO BAKE

  • Pre-heat the oven to 190c
  • First, prep the chicken by placing it in a bowl. Add the onion, garlic, sliced pepper or tomatoes and dry thyme. Season with salt and pepper. Then make sure you coat the chicken well with all the ingredients. Set aside.
  • Next, prepare the potatoes. Peel them and then cut them into 0.5cm slices. Set aside
  • In a separate bowl, mix together the breadcrumbs, parmesan and parsley
  • Now we are ready to build our bake. Make sure you coat the baking dish with a little drizzle of olive oil. First, place a layer of potato slices, season with salt, then sprinkle on top with a quarter of the parmesan crumb.
  • Next, layer the chicken on top and add all the ingredients which has been marinating in. Drizzle a little olive oil on top and sprinkle a third of the remaining parmesan crumb.
  • Place another layer of potato slices on top, ensuring that they overlap slightly with each other and the chicken is well covered. Season with a little salt and sprinkle the remaining parmesan crumb. Drizzle with olive oil on top.
  • Finally, carefully pour stock around the sides and make sure that the chicken is covered in liquid.
  • Cover with tin foil and bake in the oven for 30 minutes. Then remove the foil., turn the heat up to 220c and bake for another 15 minutes until the potatoes have browned.
  • Serve immediately

I’m 46 today ❤️  And I think more than anything, I feel grateful.  The road to 46 definitely hasn’t been a straight one. There have been some brilliant chapters and some bloody difficult ones, a few unexpected plot twists 😂 and plenty of times I’ve had to change direction and start again. But all of it has brought me here.  But sitting here at 46, I don’t want to give those difficult years all the attention.  Because look at what I’ve managed to give myself despite them.  A life between London and Lecce. A home I love. Work that that provides me so much freedom. Adventures. Food. Music. Dancing. Ridiculous amounts of laughter. And the freedom to keep being curious about what comes next.  Most importantly, I have the most incredible people around me. People who love me, show up for me, make me laugh until I cry and remind me how bloody lucky I am.  I’m also really proud of the relationship I’ve built with myself.  I think younger me spent a lot of time believing happiness would arrive when everything finally fell into place.  At 46, I know better.  Life can be messy and uncertain and occasionally throw an absolute shitshow your way 😂 and still be really, really good.  This past year especially, I’ve felt myself coming back to life. Not becoming someone new, actually. Becoming more myself.  So today I’m grateful for everything I have, incredibly proud of everything I’ve created for myself, and very excited about the woman I’m still becoming.  46. And there is still so much I want to see, eat, dance to, discover, love and experience. ❤️  Bring it on.

This is NOT the Italian breakfast you’re expecting… 🇮🇹  Because when you think of breakfast in Italy, you probably think coffee, cornetto, quick, sweet and simple.  Breakfast @lilithristorante in Salento was something completely different.  Paul @the_only_giglio and I sat down and the dishes just kept coming. Frittata, a gazpacho made with local yellow tomatoes, ham and cheese focaccia, fruit, quince jam, a peach rice pudding, chocolate torte, maritozzo… and even a little fruit.  Basically, not quite the coffee-and-cornetto situation you would be expecting 😂  And I LOVED it.  It was generous, surprising and gave me a completely different take on what breakfast in Italy can look like.  And this is one of the things I love most about exploring food in Italy; just when you think you know it, somewhere comes along and shows you something completely different.  So… are you sticking with your coffee and cornetto, or are you joining me at this table? 😂

I haven’t cooked myself pasta in ages… and this 15-minute salmon, courgette & tomato pasta is what finally broke the drought 😂🍝  A super easy pasta recipe with a handful of ingredients, very little effort and one little ingredient that makes ALL the difference, lemon zest 🍋  Sometimes you forget that cooking yourself something bloody delicious doesn’t need loads of time or ingredients. A little love goes a long way.  Salmon, courgette & tomato pasta  Fry garlic in olive oil, then add thinly sliced courgette and cook until softened.  Add a tin of tomatoes, @muttipomodorouk polpa is my favourite, season and leave the sauce to cook down while you boil your pasta water.  Cook your pasta (I love linguine or spaghetti for this because the tomato sauce clings to it beautifully).  For the last 4 minutes, add your chopped salmon and lemon zest to the sauce. That little bit of zest completely lifts the whole dish.  Drain the pasta and toss it straight into the sauce with a splash of pasta water until everything becomes lovely, creamy and glossy.  Finish with plenty of black pepper and fresh basil if you have some.  15 minutes. A handful of ingredients. A proper bowl of pasta.  Sometimes that’s all you need ❤️  #SalmonPasta #EasyPastaRecipe #ItalianRecipes

When did food shopping become so antisocial? 😅  More and more in the UK, I walk into a supermarket and there are barely any tills with an actual person behind them.  Scan your own shopping. Pay. Leave.  Efficient? Absolutely.  But after spending so much time in Italy, I’ve realised how much I value those tiny everyday interactions; saying buongiorno, having a little chat, recognising the person behind the counter. Nothing profound. Just… human connection.  And I do wonder if, in our obsession with making everything quicker and more convenient, we’re slowly removing those little moments from everyday life.  Technology can make our lives easier, help us work smarter and give us more time.  But surely the point should be to give us more time to be human, not replace the human bit altogether.  Maybe I’m old fashioned, but I don’t want a completely frictionless life if it means never having to speak to another person.  Am I alone on this one? 👀
