TTI Chocolate Salami

You will LOVE this chocolate salami recipe. I promise. It’s one of the easiest Italian desserts I will ever share with you. A gorgeous rich chocolate ‘salami, flavoured with amaretto and sultanas, textured with amaretti crumb and roasted hazelnuts. I also want to add that there is no meat involved in the making of this dessert, contrary to it’s name, LOL. Here for you is a very straightforward, super quick, step by step video.   • 75g Sultanas
  • 2 tbsp Amaretto
  • 200g Dark cooking chocolate, roughly chopped
  • 75g Unsalted butter
  • 100g Caster sugar
  • 2 Eggs
  • 200g Hard amaretti biscuits
  • 100g roasted hazlenut, chopped
  • Greaseproof paper
  • Icing sugar

  • Soak the sultanas with 1 tbsp of amaretto
  • Melt the chocolate and butter in a heat resistant bowl, sitting on top of a pan with simmering water. (Please make sure the bottom of the bowl doesn’t touch the water).
  • In the meantime, beat the sugar and the eggs together.
  • Fold in the egg mixture into the melted chocolate. Cook for another 4/5 minutes on top of the simmering water
  • In the meantime, put the amaretti biscuits into a sandwich bag. With a rolling pin, create a large crumb.
  • Remove the chocolate mix from the heat. Fold in the sultanas, nuts, amaretti crumb and 1 tbsp of amaretti. Make sure everything is well coated in the chocolate.
  • Set the mixture aside until it has cooled down.
  • Next, cut two sheets of greaseproof paper. Divide the mixture and place on top. Mould the mixture into a ‘salami’ shape. Tightly wrap the paper around it and refrigerate for 6 hours.
