Ciao, I’m Paola, I'm a self care cookery teacher and Italian food expert cook and teacher. I'm the founder of The Tiny Italian and the best online self care cookery school on the planet. I help busy people inject balance into their hectic lifestyle by transforming their cooking mindset. I open their eyes that cooking is a fun delicious form of self care rather than a dreaded chore.

I’m 46 today ❤️ And I think more than anything, I feel grateful. The road to 46 definitely hasn’t been a straight one. There have been some brilliant chapters and some bloody difficult ones, a few unexpected plot twists 😂 and plenty of times I’ve had to change direction and start again. But all of it has brought me here. But sitting here at 46, I don’t want to give those difficult years all the attention. Because look at what I’ve managed to give myself despite them. A life between London and Lecce. A home I love. Work that that provides me so much freedom. Adventures. Food. Music. Dancing. Ridiculous amounts of laughter. And the freedom to keep being curious about what comes next. Most importantly, I have the most incredible people around me. People who love me, show up for me, make me laugh until I cry and remind me how bloody lucky I am. I’m also really proud of the relationship I’ve built with myself. I think younger me spent a lot of time believing happiness would arrive when everything finally fell into place. At 46, I know better. Life can be messy and uncertain and occasionally throw an absolute shitshow your way 😂 and still be really, really good. This past year especially, I’ve felt myself coming back to life. Not becoming someone new, actually. Becoming more myself. So today I’m grateful for everything I have, incredibly proud of everything I’ve created for myself, and very excited about the woman I’m still becoming. 46. And there is still so much I want to see, eat, dance to, discover, love and experience. ❤️ Bring it on.

This is NOT the Italian breakfast you’re expecting… 🇮🇹 Because when you think of breakfast in Italy, you probably think coffee, cornetto, quick, sweet and simple. Breakfast @lilithristorante in Salento was something completely different. Paul @the_only_giglio and I sat down and the dishes just kept coming. Frittata, a gazpacho made with local yellow tomatoes, ham and cheese focaccia, fruit, quince jam, a peach rice pudding, chocolate torte, maritozzo… and even a little fruit. Basically, not quite the coffee-and-cornetto situation you would be expecting 😂 And I LOVED it. It was generous, surprising and gave me a completely different take on what breakfast in Italy can look like. And this is one of the things I love most about exploring food in Italy; just when you think you know it, somewhere comes along and shows you something completely different. So… are you sticking with your coffee and cornetto, or are you joining me at this table? 😂

I haven’t cooked myself pasta in ages… and this 15-minute salmon, courgette & tomato pasta is what finally broke the drought 😂🍝 A super easy pasta recipe with a handful of ingredients, very little effort and one little ingredient that makes ALL the difference, lemon zest 🍋 Sometimes you forget that cooking yourself something bloody delicious doesn’t need loads of time or ingredients. A little love goes a long way. Salmon, courgette & tomato pasta Fry garlic in olive oil, then add thinly sliced courgette and cook until softened. Add a tin of tomatoes, @muttipomodorouk polpa is my favourite, season and leave the sauce to cook down while you boil your pasta water. Cook your pasta (I love linguine or spaghetti for this because the tomato sauce clings to it beautifully). For the last 4 minutes, add your chopped salmon and lemon zest to the sauce. That little bit of zest completely lifts the whole dish. Drain the pasta and toss it straight into the sauce with a splash of pasta water until everything becomes lovely, creamy and glossy. Finish with plenty of black pepper and fresh basil if you have some. 15 minutes. A handful of ingredients. A proper bowl of pasta. Sometimes that’s all you need ❤️ #SalmonPasta #EasyPastaRecipe #ItalianRecipes

When did food shopping become so antisocial? 😅 More and more in the UK, I walk into a supermarket and there are barely any tills with an actual person behind them. Scan your own shopping. Pay. Leave. Efficient? Absolutely. But after spending so much time in Italy, I’ve realised how much I value those tiny everyday interactions; saying buongiorno, having a little chat, recognising the person behind the counter. Nothing profound. Just… human connection. And I do wonder if, in our obsession with making everything quicker and more convenient, we’re slowly removing those little moments from everyday life. Technology can make our lives easier, help us work smarter and give us more time. But surely the point should be to give us more time to be human, not replace the human bit altogether. Maybe I’m old fashioned, but I don’t want a completely frictionless life if it means never having to speak to another person. Am I alone on this one? 👀
