This British weather has taken a turn for the worse and on this particular Saturday night I needed to eat something that would bring be some serious warmth.
During the day, I had discovered a new Italian delicatessen, Monte’s Deli in Islington who held an impressive selection of antipasti, cheeses & charcuterie. On this particulat visit, I bought some fresh Italian sausages and jars of pre-cooked cannellini beans (great cupboard staple).
I based this dish on a Salentino recipe, (beans with pork) but this quick & easy recipe gives similar flavours but with half the cooking time.
Ingredients 2-3 people
400g Cannellini Beans (pre-cooked)
1 celery stalk, chopped into cubes
1 carrot, chopped into cubes
1 garlic clove, chopped
Salt & Pepper
300g Italian Sausage
125g Spinach (or Kale, cavolo nero)
Dry Thyme
Olive oil
- In a pan, drizzle olive oil, add the garlic, celery & carrot and cook until softened.
- Cut the sausages into quarters and add to the pan. Sprinkle half a teaspoon of dry thyme. Pan fry the sausage with the veg.
- Stir in the cannellini beans and add the spinach. Cover the pan, until the spinach has wilted and the beans have warmed up.
- Season with salt and Pepper
- Serve up. That’s it.
