Stuffed Squid with potato & tomato bake

It’s been a while since I last posted, but with all the wedding planning & sagas with my bros wedding I have been a little side tracked. However, I’m back & tonight I cooked this Puglian special.  Stuffing squid is far from a difficult affair. Actually quite easy.

Stuffed Squid w/ baked potato & tomatoIngredients (serves 2-3)

400g Squid, cleaned

Olive oil

1 onion

2 garlic cloves

5-6 ripe tomatoes, chopped

Fresh Parsley

300g Potatoes, peeled & cut into wedges

Salt & Pepper

For the stuffing

80g Breadcrumbs

40g Parmesan or Pecorino, grated

1 egg

Parsley, chopped

1 lemon juice

Salt & Pepper

  • Pre-heat oven to 200C
  • Make the stuffing, by putting all the ingredients into a bowl & mix together.
  • Stuff the cavities of the squid with the mixture & secure with a toothpick.
  • In an oven dish, drizzle olive oil and add the garlic, onion, half the tomatoes, half the parsley & season with salt.
  • Place the squid on top, and arrange  the potato around the edge & add remaining tomato & parsley.
  • Season & bake for 40 mins until potato are tender.
