Panzarella Salad

Summer right here in a mouthful. Can be served as a side dish with meat/fish on the side. Or a lovely light lunch on its own. Absolute winner and easy as anything to throw together.

Ingredients 2-3 people

Sour dough bread, a few slices

Extra Vergine Olive oil

1 red onion, sliced

Large red juicy tomatoes

Salt & Pepper

Break sourdough bread up & massage in olive oil. Bake in oven 10 mins

Slice red onion & add salt. Leave 10 min
In a bowl add the sliced onion and add 1/2 teaspoon of salt. (This get rids of any acidity of the onion). Leave for 10 mins.
Chop tomatoes
In the meantime, chop at the tomatoes in to wedges
Add tomatoes, olive oil, red wine vinegar.
Then into the bowl with the onion, add the tomatoes, olive oil (generous), red wine vinegar (a glug) and chopped fresh Basil
