Maccheroni with Aubergine & Scamorza (smoked mozzarella)

So, there are some Pasta dishes that when I cook them here, just take me back to my Salento. So simple and so flavoursome. I actually get a little emosh (haha!). This dish was cooked by my tiny Italian friend Valentina, who’s mum sent fresh maccheroni. This was the real biz

Ingredients

Olive Oil

Garlic

Aubergine, chopped into cubes

Salt & Pepper

Maccheroni (or short tube)

Scamorza (smoked mozzarella), chopped into cubes

Fresh Basil

Chopped Tomatoes, tin

 

Add olive oil, garlic and chopped aubergine

When Aubergines are cooked, add the chopped tomatoes

In the meantime, cook and drain the maccheroni
