Broadbean, pancetta & artichoke stew

This dish was inspired by a recipe i came across in a Sicilian cookbook. Sometimes, you just can’t beat a bowl of veg. I added some smoked pancetta to give it a slight edge to it and make it a rounded dish for dinner. Pretty happy wit the result

Ingredients

Frozen Broad Beans

Olive Oil

Onions, sliced

Smoked Pancetta, cubed

Mushrooms

Artichokes, in jar

Peas

Chicken stock, 1 cube diluted with water

White wine vinegar

Sugar

Add olive oil to pan, fry onions,
Then add pancetta, mushroom & artichokes. Mix
Then add pancetta, mushroom & artichokes. Mix

 

Add frozen broadbeans. Mix
Add frozen broad beans. Mix. Then Add Parsley

 

Add chicken stock to cover; cook for 10 mins

Add peas; cook for 20 mins more.

ix 1 tblsp sugar, 3 tblsp white wine vinegar; add & increase heat & cook 5 mins till evaporated
